Description

Ingredients

  • 1 pound Brussels sprouts
  • 2 ripe avocados
  • 1 cup pecans, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the bottoms of the Brussels sprouts and cut them in half.
  3. Toss the Brussels sprouts with olive oil, salt, and pepper.
  4. Spread them on a baking sheet and roast for 20-25 minutes until tender and caramelized.
  5. In a bowl, dice the avocados and mix with lemon juice to prevent browning.
  6. Once the Brussels sprouts are cooked, combine them with the avocados and chopped pecans.
