- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup honey
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 large eggs
Instructions
- Preheat your oven to 400°F (200°C) and grease an 8-inch square baking dish.
- In a large bowl, mix the cornmeal, flour, baking powder, and salt together.
- In another bowl, whisk together the buttermilk, honey, vegetable oil, and eggs.
- Combine the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
- Let it cool for a few minutes before serving.
Notes
- For a sweeter cornbread, add more honey to taste.
- Great served warm with butter.
- Store leftovers in an airtight container for up to 3 days.
