- 1 leg of lamb
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup red wine
- 2 cups vegetables (carrots, potatoes, onions)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper to create a marinade.
- Rub the marinade all over the leg of lamb.
- Place the marinated lamb in a roasting pan and pour the red wine around it.
- Add the vegetables to the pan.
- Roast in the oven for about 1.5 hours, or until the internal temperature reaches 145°F (63°C).
- Let it rest for 15 minutes before slicing.
