Description

A creamy and delicious twist on traditional mac and cheese using cauliflower.


Ingredients

  • 1 head cauliflower, cut into florets
  • 8 ounces elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 cup milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil macaroni according to package instructions. Add cauliflower in the last 5 minutes of cooking. Drain and set aside.
  3. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  4. Slowly add milk, whisking continuously until thickened.
  5. Stir in cheese, garlic powder, salt, and pepper until cheese is melted.
  6. Combine macaroni and cauliflower with cheese sauce, then transfer to a baking dish.
  7. Top with breadcrumbs and bake for 25-30 minutes until golden brown.

Notes

  • For added flavor, consider mixing in some cooked bacon or ham.
  • For a healthier version, you can use whole grain pasta.
