A creamy and delicious twist on traditional mac and cheese using cauliflower.

- 1 head cauliflower, cut into florets
- 8 ounces elbow macaroni
- 2 cups shredded sharp cheddar cheese
- 1 cup milk
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs
Instructions
- Preheat the oven to 350°F (175°C).
- Boil macaroni according to package instructions. Add cauliflower in the last 5 minutes of cooking. Drain and set aside.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
- Slowly add milk, whisking continuously until thickened.
- Stir in cheese, garlic powder, salt, and pepper until cheese is melted.
- Combine macaroni and cauliflower with cheese sauce, then transfer to a baking dish.
- Top with breadcrumbs and bake for 25-30 minutes until golden brown.
Notes
- For added flavor, consider mixing in some cooked bacon or ham.
- For a healthier version, you can use whole grain pasta.
