- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
- 6-8 tablespoons ice water
- 2 cups potatoes, peeled and diced
- 1 cup onions, finely chopped
- 1 cup cheese, shredded (cheddar or your choice)
- 1 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix flour and salt. Cut in butter until the mixture resembles coarse crumbs.
- Stir in water, a tablespoon at a time, until dough comes together. Wrap in plastic and refrigerate for 4 hours or overnight.
- Boil potatoes until tender. Drain and mash. In a skillet, sauté onions until translucent.
- Combine mashed potatoes, sautéed onions, cheese, and black pepper in a bowl.
- Roll out the dough and cut into circles. Fill each with the potato mixture and seal the edges.
- Place on a baking sheet and bake for 30-35 minutes or until golden brown.
Notes
- For a vegetarian option, use vegetable broth.
- These hand pies can be made ahead and frozen before baking.
