Description

Delicious hand pies filled with a savory mixture of cheese, onions, and potatoes, perfect for a snack or appetizer.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 6-8 tablespoons ice water
  • 2 cups potatoes, peeled and diced
  • 1 cup onions, finely chopped
  • 1 cup cheese, shredded (cheddar or your choice)
  • 1 teaspoon black pepper


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix flour and salt. Cut in butter until the mixture resembles coarse crumbs.
  3. Stir in water, a tablespoon at a time, until dough comes together. Wrap in plastic and refrigerate for 4 hours or overnight.
  4. Boil potatoes until tender. Drain and mash. In a skillet, sauté onions until translucent.
  5. Combine mashed potatoes, sautéed onions, cheese, and black pepper in a bowl.
  6. Roll out the dough and cut into circles. Fill each with the potato mixture and seal the edges.
  7. Place on a baking sheet and bake for 30-35 minutes or until golden brown.

Notes

  • For a vegetarian option, use vegetable broth.
  • These hand pies can be made ahead and frozen before baking.
