Description

Delicious and nutritious cheesy protein egg muffins that are perfect for breakfast or a snack!


Ingredients

  • 6 large eggs
  • 1 cup shredded cheese (any variety)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup spinach, chopped
  • 1/4 cup cooked sausage or bacon (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a mixing bowl, whisk the eggs until fully beaten.
  3. Add cheese, bell peppers, onions, spinach, meat (if using), salt, and pepper to the eggs and mix well.
  4. Pour the egg mixture evenly into the prepared muffin tin.
  5. Bake for 18-20 minutes or until the muffins are set and lightly golden.
  6. Let them cool slightly before removing from the muffin tin.
