- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup fresh lemon juice
- 1 cup chicken broth
- 1/4 cup capers, drained
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken breasts with salt and pepper.
- Lightly dredge the chicken in flour, shaking off any excess.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown and cooked through, around 5-7 minutes per side.
- Remove the chicken and set aside, keeping warm.
- In the same skillet, add butter, lemon juice, and chicken broth. Bring to a simmer, scraping up any brown bits from the pan.
- Add the capers and return the chicken to the skillet, simmering for an additional 2-3 minutes.
- Garnish with chopped parsley before serving.

- For a crispier texture, dredge the chicken in a mixture of breadcrumbs and flour.
