Description

Delicious and nutritious chocolate peppermint protein balls, perfect as a snack or a post-workout treat.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1/4 cup cocoa powder
  • 1/2 tsp peppermint extract
  • 1/4 cup protein powder
  • 1/4 cup dark chocolate chips
  • 1/4 cup shredded coconut (optional)


Instructions

  1. In a large bowl, combine the rolled oats, peanut butter, honey, cocoa powder, and peppermint extract.
  2. Add the protein powder and mix until all ingredients are combined.
  3. Fold in the dark chocolate chips and shredded coconut if using.
  4. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store the protein balls in an airtight container in the fridge.

Notes

  • These protein balls can be made ahead of time and stored for up to a week.
  • Feel free to substitute almond butter for peanut butter if you prefer.
