- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1/4 teaspoon salt
- 2 cups pastry cream
- 4 ounces semi-sweet chocolate
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, combine water and butter and bring to a boil.
- Stir in flour and salt, cook until the mixture forms a ball.
- Remove from heat, let cool slightly, then incorporate eggs one at a time.
- Pipe the dough onto a baking sheet into 4-5 inch long shapes.
- Bake for 25-30 minutes until golden brown.
- Let cool before filling with pastry cream.
- Prepare chocolate ganache by heating heavy cream and mixing it with chopped chocolate.
- Dip the filled éclairs in chocolate ganache and let set.
Notes
- For best results, use fresh eggs at room temperature.
- Keep éclairs refrigerated if not consumed immediately.
- Try adding a hint of vanilla extract to the pastry cream for extra flavor.
