Description

A traditional Irish dish made with mashed potatoes and cabbage or kale.


Ingredients

Scale
  • 2 pounds potatoes
  • 1/2 head green cabbage, chopped
  • 1/2 cup milk
  • 1/2 cup butter
  • 1/4 cup green onions, chopped
  • salt to taste
  • pepper to taste


Instructions

  1. Peel and chop the potatoes. Boil in a large pot until tender.
  2. While the potatoes are cooking, sauté the cabbage in butter until soft.
  3. Drain the potatoes and mash with milk, butter, salt, and pepper.
  4. Fold in the sautéed cabbage and green onions.
  5. Serve hot with additional butter on top.

Notes

  • This dish can be made with either kale or cabbage.
  • Leftovers can be stored in the refrigerator for up to 3 days.
