Deliciously soft and chewy cookies made with cookie butter.
Ingredients

- 1 cup cookie butter
- ½ cup granulated sugar
- ¼ cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups all-purpose flour
- ½ cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix cookie butter, sugars, egg, and vanilla until smooth.
- Add baking soda, salt, and flour. Mix until just combined.
- Fold in chocolate chips if using.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges are slightly golden.
- Let cool for a few minutes on the baking sheet before transferring to a wire rack.
Notes
- Stored in an airtight container, these cookies will stay fresh for up to a week.
- Adjust the amount of cookie butter for desired flavor intensity.
