- 1 pound fresh mushrooms, sliced
- 1/2 cup onions, diced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon fresh parsley, chopped
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and sauté until translucent.
- Add the sliced mushrooms and cook until they are soft.
- Stir in the flour and cook for 2 minutes.
- Gradually whisk in the vegetable broth, ensuring there are no lumps.
- Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
- Stir in the heavy cream, salt, black pepper, and garlic powder. Heat through.
- Garnish with fresh parsley before serving.
Notes
- This soup can be stored in the refrigerator for up to 3 days.
- For a thicker soup, blend a portion of the soup and mix it back in.
