Description

A rich and creamy soup made with fresh mushrooms, perfect as a starter or a main dish.


Ingredients

  • 1 pound fresh mushrooms, sliced
  • 1/2 cup onions, diced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and sauté until translucent.
  2. Add the sliced mushrooms and cook until they are soft.
  3. Stir in the flour and cook for 2 minutes.
  4. Gradually whisk in the vegetable broth, ensuring there are no lumps.
  5. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  6. Stir in the heavy cream, salt, black pepper, and garlic powder. Heat through.
  7. Garnish with fresh parsley before serving.

  • For a thicker soup, blend a portion of the soup and mix it back in.
