Description

This hearty crockpot beef stew is perfect for chilly days and packed with flavor.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons cornstarch (optional, for thickening)


Instructions

  1. In a large skillet, brown the beef chuck over medium-high heat.
  2. Add the browned beef to the crockpot.
  3. Stir in the beef broth, carrots, potatoes, onion, garlic, tomato paste, thyme, salt, pepper, and Worcestershire sauce.
  4. Cover and cook on low for 8 hours, or until the beef is tender.
  5. If desired, mix cornstarch with water to create a slurry and add to the stew for thickening in the last 30 minutes of cooking.

Notes

  • For best results, sear the beef before adding it to the crockpot.
  • Feel free to add in other vegetables like peas or green beans.
