This hearty crockpot beef stew is perfect for chilly days and packed with flavor.
Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 2 tablespoons cornstarch (optional, for thickening)
Instructions
- In a large skillet, brown the beef chuck over medium-high heat.
- Add the browned beef to the crockpot.
- Stir in the beef broth, carrots, potatoes, onion, garlic, tomato paste, thyme, salt, pepper, and Worcestershire sauce.
- Cover and cook on low for 8 hours, or until the beef is tender.
- If desired, mix cornstarch with water to create a slurry and add to the stew for thickening in the last 30 minutes of cooking.
Notes
- For best results, sear the beef before adding it to the crockpot.
- Feel free to add in other vegetables like peas or green beans.
