Description

This rich and creamy chocolate hazelnut ice cream is perfect for chocolate lovers.


Ingredients

Scale
  • 1 cup hazelnuts, toasted and skinned
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 6 large egg yolks
  • 1 cup bittersweet chocolate, melted


Instructions

  1. In a blender, blend the hazelnuts until smooth.
  2. In a saucepan, heat the cream, milk, sugar, and salt over medium heat until warm.
  3. Whisk the egg yolks in a bowl, then slowly add the warm cream mixture.
  4. Return to the saucepan and cook until thickened.
  5. Stir in the melted chocolate and hazelnut puree.
  6. Chill the mixture, then churn in an ice cream maker according to manufacturer’s instructions.
  7. Transfer to a container and freeze until firm.

Notes

  • For a smoother texture, strain the mixture before churning.
  • Can be served with chopped hazelnuts on top.
