Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground sausage
- 1 (28-ounce) can crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked pasta
- 1 cup mozzarella cheese, shredded
- 1/4 cup pepperoni, sliced
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until soft.
- Add ground sausage and cook until browned. Drain excess fat.
- Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add cooked pasta, mozzarella cheese, and pepperoni. Stir until cheese is melted.
- Serve hot and enjoy!

- This soup can be made ahead of time and stored in the refrigerator.
- Top with additional cheese or fresh basil for added flavor.
