Description

A rich and moist cake made with espresso and walnuts, perfect for coffee lovers.


Ingredients

  • 1 cup pitted dates, chopped
  • 1 cup brewed espresso
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup walnuts, chopped


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, soak the chopped dates in brewed espresso for about 30 minutes.
  3. In a separate mixing bowl, cream together the butter and brown sugar until smooth.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Gradually mix in the flour, baking powder, baking soda, and salt until combined.
  6. Fold in the espresso-soaked dates and chopped walnuts.
  7. Pour the batter into a greased cake pan.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let cool before serving.

Notes

  • For a richer flavor, use dark roast espresso.
