- 1 cup brewed espresso
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup walnuts, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, soak the chopped dates in brewed espresso for about 30 minutes.
- In a separate mixing bowl, cream together the butter and brown sugar until smooth.
- Add the eggs, one at a time, mixing well after each addition.
- Gradually mix in the flour, baking powder, baking soda, and salt until combined.
- Fold in the espresso-soaked dates and chopped walnuts.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For a richer flavor, use dark roast espresso.
- Can be served warm with whipped cream.
