- 1 cup rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can diced tomatoes
- 1 cup green bell pepper, chopped
- 1 tablespoon soy sauce
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup water
Instructions
- In a large saucepan, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Stir in the chopped green bell pepper and cook for another 2-3 minutes.
- Add the rice to the saucepan and stir well to combine.
- Pour in the diced tomatoes, soy sauce, paprika, cumin, black pepper, and salt.
- Add water, bring to a boil, then reduce heat to low.
- Cover and simmer for about 20 minutes, or until the rice is tender and liquid is absorbed.
- Fluff with a fork before serving.
