- 1 cup chickpeas, drained and rinsed
- 1 cup peanut butter
- 1/2 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a food processor, combine the chickpeas, peanut butter, maple syrup, vanilla extract, baking soda, and salt. Process until smooth.
- If using, stir in the chocolate chips.
- Using a spoon, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are slightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Store cookies in an airtight container for up to a week.
- These cookies can be frozen for up to 3 months.
- Feel free to add nuts or seeds for additional texture.
