Description

These delicious Fruit and Nut Bars are a healthy snack inspired by Larabars, featuring only natural ingredients.


Ingredients

Scale
  • 1 cup dates, pitted
  • 1 cup almonds
  • 1/2 cup cashews
  • 1/2 cup walnuts
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened shredded coconut


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a food processor, combine the dates, almonds, cashews, walnuts, cinnamon, and salt. Pulse until the mixture is finely chopped.
  3. Add the shredded coconut and pulse a few more times until combined.
  4. Transfer the mixture to the prepared baking dish and press it down evenly.
  5. Bake for 15-20 minutes until the edges start to turn golden.
  6. Let it cool completely before cutting into bars.

  • Store in an airtight container in the fridge for up to a week.
