- 4 chicken thighs bone-in, skin-on
- 1 pound baby potatoes
- 4 tablespoons butter
- 6 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt to taste
- Black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, melt butter and sauté garlic until fragrant.
- Season chicken thighs with salt, pepper, and thyme.
- In the skillet, add the chicken skin-side down and sear until golden brown.
- Add baby potatoes, drizzle with garlic butter, and toss to coat.
- Transfer the skillet to the oven and bake for 35-40 minutes.
- Garnish with fresh parsley before serving.
