Description

A flavorful and hearty dish featuring tender chicken and crispy potatoes coated in garlic butter.


Ingredients

  • 4 chicken thighs bone-in, skin-on
  • 1 pound baby potatoes
  • 4 tablespoons butter
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, melt butter and sauté garlic until fragrant.
  3. Season chicken thighs with salt, pepper, and thyme.
  4. In the skillet, add the chicken skin-side down and sear until golden brown.
  5. Add baby potatoes, drizzle with garlic butter, and toss to coat.
  6. Transfer the skillet to the oven and bake for 35-40 minutes.
  7. Garnish with fresh parsley before serving.
