Ingredients

- 1 cup chickpeas, cooked
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 tablespoon water
- sesame seeds, for garnish
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add minced garlic and ginger, sauté for 1 minute.
- Add broccoli and bell pepper, cook for 5 minutes until tender-crisp.
- Stir in chickpeas, soy sauce, and honey, and cook for another 3 minutes.
- In a small bowl, mix cornstarch and water to create a slurry, add to stir fry and cook until sauce thickens.
- Garnish with sesame seeds before serving.
Notes
- Serve over rice or quinoa for a complete meal.
- Adjust the sweetness by adding more or less honey.
- Add crushed red pepper flakes for heat.
