Description

A delicious and hearty stir fry packed with protein and flavor, perfect for a quick weeknight dinner.


Ingredients

Scale
  • 1 cup chickpeas, cooked
  • 2 cups broccoli florets
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • sesame seeds, for garnish


Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add minced garlic and ginger, sauté for 1 minute.
  3. Add broccoli and bell pepper, cook for 5 minutes until tender-crisp.
  4. Stir in chickpeas, soy sauce, and honey, and cook for another 3 minutes.
  5. In a small bowl, mix cornstarch and water to create a slurry, add to stir fry and cook until sauce thickens.
  6. Garnish with sesame seeds before serving.

Notes

  • Serve over rice or quinoa for a complete meal.
  • Adjust the sweetness by adding more or less honey.
  • Add crushed red pepper flakes for heat.
