Ingredients

- 1 cup crushed gingerbread cookies
- 1/2 cup cream cheese, softened
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1 tablespoon molasses
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a bowl, mix crushed gingerbread cookies, cream cheese, spices, and molasses until well combined.
- Chill the mixture in the refrigerator for about 30 minutes.
- Once chilled, roll the mixture into small balls and place on a baking sheet.
- In a microwave-safe bowl, melt the white chocolate and coconut oil together.
- Dip each truffle into the melted chocolate, coating completely.
- Place the coated truffles back on the baking sheet and let them set.
- Serve chilled or at room temperature.

- Store truffles in an airtight container in the refrigerator for up to a week.
- For a festive touch, sprinkle with crushed candy canes before the chocolate sets.
