Description

These delightful gingersnap cookies are perfectly spiced and have a wonderful chewy texture.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1/4 cup molasses
  • 1/4 cup granulated sugar (for rolling)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until smooth.
  4. Add the egg and molasses, mixing well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Form the dough into balls, roll in granulated sugar, and place on a baking sheet.
  7. Bake for 8-10 minutes or until the edges are set.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra spice, add more ginger or cinnamon to the dough.
