- 1 cup dried white beans
- 6 cups vegetable broth
- 1 onion, diced
- 4 cloves garlic, minced
- 2 carrots, diced
- 1 celery stalk, diced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery; sauté until softened.
- Add dried beans and vegetable broth. Bring to a boil, then reduce heat and simmer until beans are tender.
- Stir in oregano, salt, pepper, and lemon juice. Simmer for another 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- For a creamier texture, blend a portion of the soup and then stir it back in.
- This soup can be made in advance and improves in flavor when stored overnight.
