Description

A creamy and delicious green mac and cheese loaded with nutritious greens.


Ingredients

Scale
  • 8 ounces elbow macaroni
  • 1 tablespoon olive oil
  • 2 cups spinach
  • 1 cup broccoli florets
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Cook macaroni according to package directions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat and add spinach and broccoli; sauté until wilted.
  3. In a large pot, combine macaroni, sautéed greens, cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.
  4. Cook over low heat until cheese melts and everything is heated through.
  5. Serve warm and enjoy!

Notes

  • For a spicier version, add red pepper flakes.
  • Substitute any cheese of your choice.
  • Can add cooked chicken or bacon for extra protein.
