- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup grated Gruyère cheese
- 4 large eggs, separated
- 1/4 cup chopped fresh chives
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Butter a soufflé dish and dust it with flour.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
- Gradually whisk in the milk, cooking until the mixture thickens.
- Remove from heat and stir in the cheese, chives, salt, and pepper.
- Allow to cool slightly, then add the egg yolks.
- In a separate bowl, whip the egg whites until stiff peaks form. Gently fold the egg whites into the cheese mixture.
- Transfer the mixture to the prepared soufflé dish.
- Bake for 25-30 minutes until puffed and golden.
- Serve immediately.
Notes
- For extra flavor, you can add a pinch of nutmeg to the cheese mixture.
- Make sure to serve the soufflé right out of the oven for the best texture.
