Description

This Gruyère and Chive Soufflé is a light and fluffy dish, perfect for a sophisticated brunch or a special dinner occasion.


Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup grated Gruyère cheese
  • 4 large eggs, separated
  • 1/4 cup chopped fresh chives
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butter a soufflé dish and dust it with flour.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the milk, cooking until the mixture thickens.
  5. Remove from heat and stir in the cheese, chives, salt, and pepper.
  6. Allow to cool slightly, then add the egg yolks.
  7. In a separate bowl, whip the egg whites until stiff peaks form. Gently fold the egg whites into the cheese mixture.
  8. Transfer the mixture to the prepared soufflé dish.
  9. Bake for 25-30 minutes until puffed and golden.
  10. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of nutmeg to the cheese mixture.
  • Make sure to serve the soufflé right out of the oven for the best texture.
