Description

Delicious corned beef cooked with Guinness for a rich flavor.


Ingredients

Scale
  • 4 pounds corned beef brisket
  • 1 can Guinness beer
  • 1 tablespoon black peppercorns
  • 3 bay leaves
  • 4 cloves garlic, minced
  • 1 medium onion, quartered
  • 6 carrots, cut into chunks
  • 3 stalks celery, cut into chunks
  • 1/2 head cabbage, cut into wedges


Instructions

  1. Place corned beef in a large pot and cover with water.
  2. Add the Guinness, peppercorns, bay leaves, garlic, and onion.
  3. Bring to a boil, then reduce heat to a simmer.
  4. Cover and cook for about 3 hours, or until tender.
  5. Add carrots and celery, cooking for an additional 30 minutes.
  6. Add cabbage and cook for another 15 minutes.
  7. Remove corned beef and let rest before slicing.

Notes

  • For a stronger flavor, marinate the corned beef overnight in the Guinness.
  • Serve with mustard for added taste.
