Description
Delicious corned beef cooked with Guinness for a rich flavor.
Ingredients

- 4 pounds corned beef brisket
- 1 can Guinness beer
- 1 tablespoon black peppercorns
- 3 bay leaves
- 4 cloves garlic, minced
- 1 medium onion, quartered
- 6 carrots, cut into chunks
- 3 stalks celery, cut into chunks
- 1/2 head cabbage, cut into wedges
Instructions
- Place corned beef in a large pot and cover with water.
- Add the Guinness, peppercorns, bay leaves, garlic, and onion.
- Bring to a boil, then reduce heat to a simmer.
- Cover and cook for about 3 hours, or until tender.
- Add carrots and celery, cooking for an additional 30 minutes.
- Add cabbage and cook for another 15 minutes.
- Remove corned beef and let rest before slicing.
Notes
- For a stronger flavor, marinate the corned beef overnight in the Guinness.
- Serve with mustard for added taste.
