These Healthy Carrot and Banana Muffins are easy to make and incredibly fluffy, perfect for a nutritious snack or breakfast!
Ingredients

- 2 ripe bananas
- 1 cup grated carrots
- 1/2 cup honey or maple syrup
- 1/4 cup Greek yogurt
- 1/4 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin pan with liners.
- In a large bowl, mash the bananas and mix in the grated carrots, honey, Greek yogurt, vegetable oil, eggs, and vanilla extract.
- In another bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
- Combine the wet and dry ingredients, stirring until just mixed.
- Pour the batter into the prepared muffin pan, filling each liner about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before removing from the pan.
Notes
- Store in an airtight container for up to 5 days.
- For added flavor, consider mixing in nuts or raisins.
