Description

These Healthy Carrot and Banana Muffins are easy to make and incredibly fluffy, perfect for a nutritious snack or breakfast!


Ingredients

Scale
  • 2 ripe bananas
  • 1 cup grated carrots
  • 1/2 cup honey or maple syrup
  • 1/4 cup Greek yogurt
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with liners.
  2. In a large bowl, mash the bananas and mix in the grated carrots, honey, Greek yogurt, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  4. Combine the wet and dry ingredients, stirring until just mixed.
  5. Pour the batter into the prepared muffin pan, filling each liner about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool before removing from the pan.
