- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 whole wheat tortillas
- 2 cups spinach, chopped
- 1 cup shredded cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine black beans, corn, diced tomatoes, cumin, and chili powder.
- Fill each tortilla with the mixture, add spinach, and sprinkle with cheese.
- Roll up the tortillas and place them seam-side down in a baking dish.
- Bake for 20-25 minutes until heated through and cheese is melted.
