A deliciously layered dessert that is low in carbs and perfect for keto lovers. This Heavenly Keto Berry Trifle Cake combines fluffy layers of cake, fresh berries, and creamy filling.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup erythritol
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 1/4 cup powdered erythritol
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, mix almond flour, coconut flour, baking powder, baking soda, salt, and erythritol.
  3. In another bowl, whisk together eggs, almond milk, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes.
  6. Allow the cake to cool completely, then slice it into layers.
  7. Whip the heavy cream with powdered erythritol and vanilla extract until soft peaks form.
  8. Layer the cake with whipped cream and mixed berries in a trifle dish.
  9. Repeat layers until ingredients are used up, finishing with whipped cream on top.
  10. Chill in the refrigerator for at least an hour before serving.
