Ingredients

- 4 large russet potatoes
- 2 quarts vegetable oil
- 1 tablespoon salt
- 1 teaspoon white vinegar
Instructions
- Peel the potatoes and cut them into thin strips.
- Soak the potato strips in cold water for at least 30 minutes.
- Drain and dry the potatoes with a clean towel.
- Heat the vegetable oil in a large pot to 350°F (175°C).
- Fry the potatoes in batches until golden brown, about 5-7 minutes.
- Remove the fries from the oil and place them on paper towels to drain excess oil.
- While still hot, sprinkle with salt and vinegar if desired.
- Serve immediately.
Notes
- For extra crispiness, you can double fry the potatoes.
- Make sure the oil is at the right temperature to avoid greasy fries.
