Instructions
- Place the flour on a clean surface and create a well in the center. Add the eggs and salt into the well.
- Using a fork, gradually mix the flour into the eggs until a dough begins to form.
- Knead the dough for about 10 minutes until smooth and elastic. Wrap in plastic and let it rest for 30 minutes.
- In a bowl, combine the ricotta, parmesan, basil, parsley, and egg yolk. Mix well to create the filling.
- Roll out the dough as thin as possible using a rolling pin.
- Cut the rolled dough into squares or circles and place a teaspoon of filling in the center of each square.
- Fold the dough over to create a pocket and seal the edges by pressing them together.
- Bring a large pot of salted water to a boil. Cook the ravioli for 4-5 minutes until they float to the top.
- Drain and serve with your favorite sauce.
