Instructions
- Preheat the oven to 400°F (200°C).
- Grease a pie dish.
- Press the grated potatoes into the bottom and up the sides of the pie dish, forming a crust.

- In a bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
- Add the cheese and diced vegetables to the egg mixture.
- Pour the mixture over the potato crust.
- Bake for an additional 30 minutes or until the center is set.
