This Irresistible Spicy Cashew Chicken is an easy and delicious weeknight meal that you can make in just 30 minutes!

- 1 pound chicken breast, cut into bite-sized pieces
- 1 cup cashews
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- ½ teaspoon red pepper flakes
- 3 green onions, sliced
Instructions
- In a large skillet, heat sesame oil over medium-high heat.
- Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- Add the garlic and ginger; sauté for 1 minute.
- Stir in mixed vegetables and cook until tender, about 3-4 minutes.
- In a small bowl, mix soy sauce, honey, and red pepper flakes. Pour over chicken and vegetables.
- Add the cashews and stir to combine.
- Cook for an additional 2 minutes until heated through.
- Garnish with green onions and serve immediately.
Notes
- This dish is best served with rice or noodles.
- Feel free to adjust the level of spiciness by adding more or less red pepper flakes.
