- 1 pound chicken breast, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon Italian seasoning
- 1 pound gnocchi
- 2 cups spinach
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated
- salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced chicken and cook until browned.
- Stir in carrots, celery, onion, and garlic, cooking until softened.
- Pour in the chicken broth and add Italian seasoning; bring to a boil.
- Add the gnocchi and cook until they float to the top.
- Stir in spinach, heavy cream, and parmesan cheese; cook until heated through.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- Reheat gently on the stove, adding a splash of broth if it thickens too much.
