Description

A refreshing and flavorful Italian summer soup filled with fresh vegetables and herbs.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • 1 cup fresh spinach
  • 1/4 cup fresh parsley, chopped


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery; sauté until softened.
  3. Stir in the garlic, zucchini, and bell pepper; cook for another few minutes.
  4. Add the diced tomatoes, vegetable broth, basil, oregano, salt, and pepper.
  5. Bring to a boil, then reduce to a simmer and cook for about 20 minutes.
  6. Stir in the spinach and parsley; cook for another 5 minutes.
  7. Adjust seasoning as needed and serve warm.

Notes

  • Serve with crusty bread for a complete meal.
  • This soup can be made ahead of time and stored in the refrigerator.
