Description

This Lemon Blueberry Cake is a delightful, moist dessert bursting with fresh blueberries and a zesty lemon flavor.


Ingredients

  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 4 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 cup buttermilk
  • 2 cups fresh blueberries


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add butter, eggs, lemon zest, lemon juice, and buttermilk. Mix until smooth.
  4. Fold in blueberries gently.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  7. Let the cakes cool before removing from pans.

Notes

  • For a sweeter flavor, add a glaze made with powdered sugar and lemon juice on top of the cooled cake.
