- 1 cup powdered sugar

- 1 cup lemon curd
- 1/4 cup granulated sugar for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together butter, granulated sugar, and powdered sugar until smooth.
- Add vanilla extract and mix.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Stir in the lemon curd until fully incorporated.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are lightly golden.
- Let the cookies cool slightly, then sprinkle with granulated sugar.
- Use a kitchen torch to caramelize the sugar on top until golden.
- Allow to cool before serving.
