Description

This Lemon Zucchini Cake is moist and zesty, topped with a rich cream cheese frosting. It’s perfect for any occasion!


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together zucchini, sugars, oil, eggs, vanilla, and lemon extracts.
  3. In another bowl, whisk flour, baking soda, baking powder, salt, and lemon zest.
  4. Combine both mixtures and pour into a greased cake pan.
  5. Bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Let the cake cool completely before frosting.
  7. For the frosting, beat cream cheese, butter, and powdered sugar until smooth, then spread over the cake.
