- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 cans black beans, rinsed and drained
- 4 cups vegetable broth
- 1 bell pepper, diced
- 1 cup corn
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lime juice
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until the onion is translucent.
- Stir in cumin and chili powder, cook for 1 minute.
- Add black beans, vegetable broth, bell pepper, corn, salt, and pepper. Bring to a boil.
- Reduce heat, simmer for 20 minutes, stirring occasionally.
- Stir in lime juice before serving.
