Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cans black beans, rinsed and drained
  • 4 cups vegetable broth
  • 1 bell pepper, diced
  • 1 cup corn
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until the onion is translucent.
  2. Stir in cumin and chili powder, cook for 1 minute.
  3. Add black beans, vegetable broth, bell pepper, corn, salt, and pepper. Bring to a boil.
  4. Reduce heat, simmer for 20 minutes, stirring occasionally.
  5. Stir in lime juice before serving.
