Description

A rich and flavorful Christmas spice cake topped with luxurious eggnog buttercream.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped walnuts (optional)
  • 2 cups powdered sugar
  • 1/4 cup eggnog
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract (for frosting)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  3. In a large mixing bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  5. Gradually add dry ingredients to the butter mixture, alternating with buttermilk. Mix until just combined.
  6. If using, fold in walnuts.
  7. Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let cakes cool in pans for 10 minutes before transferring to wire racks to cool completely.
  9. For frosting, beat butter and powdered sugar in a bowl. Add eggnog and vanilla extract and mix until smooth.
  10. Once cakes are cool, frost between layers and on top.
