Description
A rich and flavorful Christmas spice cake topped with luxurious eggnog buttercream.

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup chopped walnuts (optional)
- 2 cups powdered sugar
- 1/4 cup eggnog
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
- In a large mixing bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- Gradually add dry ingredients to the butter mixture, alternating with buttermilk. Mix until just combined.
- If using, fold in walnuts.
- Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cakes cool in pans for 10 minutes before transferring to wire racks to cool completely.
- For frosting, beat butter and powdered sugar in a bowl. Add eggnog and vanilla extract and mix until smooth.
- Once cakes are cool, frost between layers and on top.
Notes
- This cake can be made a day in advance for better flavor.
- Store in an airtight container to keep fresh.
