Ingredients

- 1 pound cheese tortellini
- 1 pound beef sirloin, thinly sliced
- 1 cup bell peppers, sliced
- 1 cup onions, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup provolone cheese, shredded
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the sliced onions and bell peppers, cooking until soft.
- Increase heat to medium-high, add sliced beef, and cook until browned.
- Stir in the garlic and cook for an additional minute.
- Add cheese tortellini and water, cover, and simmer until the tortellini is cooked through.
- Reduce heat to low, sprinkle provolone cheese over the top, and cover until melted.
- Season with salt and pepper before serving.
Notes
- For a spicier version, add jalapeños or red pepper flakes.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
