- 1 cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in egg and vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually mix into the creamed mixture.
- Stir in peppermint extract and chocolate chips.
- Form dough into balls and roll in sprinkles.
- Place on a baking sheet and slightly flatten.
- Bake for 10-12 minutes or until lightly golden.
- Let cool before serving.
Notes
- Store cookies in an airtight container for up to a week.
- For an extra minty flavor, add crushed peppermint candies on top before baking.
