Deliciously light and chewy raspberry macarons with a perfect filling.
Ingredients

- 1 cup almond flour
- 1 cup powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon raspberry extract
- 1/4 cup raspberry puree
Instructions
- Preheat the oven to 300°F (150°C).
- Sift almond flour and powdered sugar together.
- Whip the egg whites until foamy, then add granulated sugar and cream of tartar, whisk until stiff peaks form.
- Fold in the dry ingredients and raspberry extract gently.
- Pipe onto a baking sheet and let sit for 30 minutes.
- Bake for 15-20 minutes and cool completely.
- Prepare raspberry filling and assemble macarons.
Notes
- Make sure to use aged egg whites for better results.
- Raspberry puree can be replaced with other fruit purees.
