Description

Deliciously light and chewy raspberry macarons with a perfect filling.


Ingredients

Scale
  • 1 cup almond flour
  • 1 cup powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon raspberry extract
  • 1/4 cup raspberry puree


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Sift almond flour and powdered sugar together.
  3. Whip the egg whites until foamy, then add granulated sugar and cream of tartar, whisk until stiff peaks form.
  4. Fold in the dry ingredients and raspberry extract gently.
  5. Pipe onto a baking sheet and let sit for 30 minutes.
  6. Bake for 15-20 minutes and cool completely.
  7. Prepare raspberry filling and assemble macarons.

Notes

  • Make sure to use aged egg whites for better results.
  • Raspberry puree can be replaced with other fruit purees.
