- 2 cups red lentil flour
- 1 large egg
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup water (as needed)
Instructions
- Mix red lentil flour, salt, and black pepper in a bowl.
- Make a well in the center, add the egg and olive oil.
- Gradually incorporate the flour into the wet ingredients, forming a dough.
- If the dough is too dry, add water a tablespoon at a time.
- Knead the dough on a floured surface until smooth.
- Roll the dough into logs and cut into small pieces.
- Form each piece into a gnocchi shape, using a fork for texture.
- Cook gnocchi in boiling salted water until they float, about 2-3 minutes.
- Drain and serve with your favorite sauce.

- Store leftovers in the refrigerator for up to 3 days.
