Ingredients

- 4 fillets salmon
- 1 cup lentils
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon thyme
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the lentils and set aside.
- In a pot, heat olive oil over medium heat and sauté onion and garlic until translucent.
- Add lentils, vegetable broth, and thyme. Season with salt and pepper.
- Bring to a boil, then simmer until lentils are tender.
- While lentils are cooking, season salmon fillets with salt and pepper.
- In a skillet, cook salmon over medium heat for about 4-5 minutes per side, or until cooked through.
- Serve salmon over a bed of braised lentils.
Notes
- For added flavor, consider adding a splash of lemon juice on top before serving.
- Make sure not to overcook the salmon to maintain its moisture and tenderness.
