Description

This Sancocho recipe is the ultimate Dominican beef stew, packed with flavor and tradition.


Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 green bell peppers, chopped
  • 3 medium potatoes, peeled and diced
  • 2 sweet potatoes, peeled and diced
  • 1 plantain, peeled and sliced
  • 1 carrot, sliced
  • 1 cauliflower, chopped
  • 4 cups beef broth
  • 1 teaspoon oregano
  • 2 bay leaves
  • 1 cup cilantro, chopped
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat oil over medium heat. Brown the beef on all sides.
  2. Add onions, garlic, and peppers. Cook until softened.
  3. Pour in the beef broth and bring to a boil.
  4. Add potatoes, sweet potatoes, plantain, carrot, and cauliflower.
  5. Season with oregano, bay leaves, salt, and pepper.
  6. Lower the heat and simmer for about 1 hour, or until the beef is tender.
  7. Stir in the cilantro before serving.

Notes

  • This stew can be served with rice and avocado on the side.
  • For a thicker stew, mash some of the potatoes.
