Description

These red lentil protein pancakes are a healthy and easy breakfast option, perfect for meal prep.


Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 1/2 cup almond milk
  • 1/2 teaspoon vanilla extract


Instructions

  1. Rinse the red lentils under cold water and drain.
  2. In a pot, combine lentils and water, and bring to a boil. Reduce heat and simmer until lentils are tender.
  3. Let the lentils cool slightly, then mash them in a bowl.
  4. Add flour, baking powder, salt, olive oil, maple syrup, almond milk, and vanilla extract to the mashed lentils and mix until smooth.
  5. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  6. Pour batter onto the sheet to form pancakes and bake for 15-20 minutes, until golden brown.
  7. Flip halfway through for even cooking.
  8. Remove from oven and serve warm.
