Description

A refreshing and delicious shrimp salad served in crispy lettuce cups.


Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 cup diced celery
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 head butter lettuce
  • 1/4 cup chopped dill


Instructions

  1. In a large pot, bring water to a boil and add the shrimp. Cook until they turn pink, about 2-3 minutes. Drain and chop into small pieces.
  2. In a mixing bowl, combine the shrimp, diced celery, mayonnaise, lemon juice, Dijon mustard, salt, and pepper. Mix well.
  3. Wash the butter lettuce and separate the leaves.
  4. Spoon the shrimp mixture into each lettuce leaf to create cups.
  5. Garnish with chopped dill before serving.

Notes

  • For added crunch, consider adding diced bell peppers.
  • This recipe can be made ahead of time; just keep the shrimp salad refrigerated until ready to serve.
