Description

This Slow Cooker Beef Barbacoa is a delightful, flavorful dish perfect for tacos, burritos, or rice bowls.


Ingredients

  • 3 pounds chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup beef broth
  • 2 tablespoons lime juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons chipotle peppers in adobo sauce


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt, black pepper, cumin, oregano, garlic powder, and onion powder.
  2. Brown the roast on all sides, about 4-5 minutes per side.
  3. Transfer the roast to the slow cooker.
  4. In a bowl, mix beef broth, lime juice, apple cider vinegar, and chipotle peppers. Pour over the roast.
  5. Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
  6. Shred the beef with two forks and serve.
